I love the idea of saving my craft ideas, crochet patterns and home decor (etc!) for later use. However, I am addicted to pinning Recipes.




I occasionally have to wipe the drool from the keyboard, they look so yummy. I find that when I try recipes from Pinterest, some have turned out fabulous and some, eh, not so much.  I thought I would give a review every once and a while and let you know how my family and I liked the recipes. So, without further ado, here is the first Pin-TESTED recipe:

I love cooking. I am not, much to my friends dismay, a precise chef. What I mean by that is that I don’t always measure. Perhaps I am over-confident, but I typically eyeball ingredients like few tablespoons of olive oil, or a 1/4 tsp of pepper.  

Whipping up this recipe was no exception.  I didn’t measure a thing! Lol. But, just in case you do, Here are the ingredients:

  • 2 chicken breasts {or 3-4 boneless skinless thighs}
  • kosher salt and black pepper
  • 2 Tbsp extra virgin olive oil
  • {1 large zucchini, sliced}
  • 2 cups chopped fresh tomatoes
  • 2 tsp minced fresh garlic< /li>
  • 4 Tbsp cold butter
  • 1/2 cup fresh basil, chopped
  • freshly grated Parmigiano reggiano cheese, for garnish

I also like to make personal adaptations. For example, I already had boneless skinless chicken thighs defrosted, so I use that instead of chicken breasts (don’t forget to adjust cooking time for smaller pieces of chicken). Here, I sprinkled each side of the chicken with salt and pepper. Then browned the them on both sides in olive oil.

You will notice if you compare my ingredient list with Julie’s, I decided to throw in zucchini because I had it on hand( a few minutes before adding the tomatoes).

Saute the zucchini with the chicken until it is almost tender.  Then add the tomatoes, garlic, butter, and basil. Saute until vegetables are tender.

So, what did the family and I think about the Tomato Basil Chicken {with zucchini}? We thought it was pretty darn good. I will definitely make this one again.  I appreciate that it whips up fast – less than 30 minutes! But, I love the fresh ingredients the most. Italian cooking allows for a lot of fresh veggies. Yum!

I will say, though, that it was missing something. I still cannot put my finger on it, but I was looking for something more authentic, perhaps? I don’t know… If you figure it out, let me know. 😉
